This restaurant earned its reputation under chef Lieven Vercouteren, who was awarded a Michelin star. Service radically improved under the brilliant Bocuse and Ducasse inspired cuisine of Christophe Bernard (now chef-patron of La Grillade), but the star was lost in the transition from the previous to the current owners. If anything the food is even better under the current chef, Gilles Goess, who trained at the Royal Monceau and the Ritz in Paris, so it is no surprise that La Briqueterie regained its one Michelin star in February 2007. With almost two million euros invested in this establishment, including a new kitchen and restaurant, Goess is well equipped to aim for a second star although, sensibly, there are no plans to do so at the moment. Investment has also gone into the hotel side of this country house, bringing it up to 'Relais & Châteaux' standard.
