The brothers Oliver and Didier Gimmonet make some of the finest blue-chip Chardonnay Champagnes. Famous for their verve and remarkable consistency the brothers start with distinct advantages for this is a large domaine of 28ha with very old vines in Chouilly and Cramant. The bone-dry Cuvée Gastronome is made for shellfish, and the special Vieilles Vignes (1992, 2002) is a superb partner for turbot and sea bass.
