The restaurant has been given a modern makeover, the atmosphere is more relaxed and la patronne smiles more readily than she did. Her husband Jacky Louazé is a supremely gifted chef who has a beautiful touch with fish. His whole sea bass roasted in an earthenware pot (tandoor-style) is as good as it gets anywhere. Already having one Michelin star, he deserves two and is certainly much more consistent in the kitchen than the rather pretentious Arnaud Lallement at the Assiette Champenoise. For carnivores, the Pyrenean gigot of milk fed lamb is also superb. Wonderful desserts and a decent list of Champagnes, if a bit too oriented to the larger houses.
