Just over a mile east of Troyes's great cathedral, this spotless bijou by the Seine in Pont Ste-Marie is far surer value than most of the big restaurants in the city. Kick off with the best andouilettes de Troyes (from Gilbert Le Meille) or superb de-boned pig's trotters pan-fried by the sure hand of chef-patron Yves Brousset. Another tack might be to choose the salad of warm red mullet, followed by the entrecôte steak with trompettes mushrooms and creamed courgettes, then a little cheese from the well-kept board, and the strawberry gateau with crème anglais, plus say a little pichet of delicious Aligoté and maybe another of fresh Beaujolais – now that's bistrot food at its best. The excellent budget-saving menus fully deserve the Michelin bib. Finish with great espresso and a glass of the Prunelle de Troyes made by a distiller in the shadow of the cathedral.
