The timbered market town of Bar sur Aube boasts this fine restaurant, delivering the superb-value cooking of chef-patron Daniel Phélizot -a star of tomorrow. Already awarded a Michelin bib, a full rosette must be coming soon. From the menus you can eat exceptionally well on tuna tartare with spices, thin Chaource cheese tart with basil oil, finely layered rabbit terrine, fish of the day in the lightest of sauce and slices of duck magret with magra bendri (a wine- and fruit-based cocktail) sweet and sour flavours, finishing with nougat glacé with candied fruits. The wine list too is exceptional value – two great Champagnes from these Côte des Bar vineyards are the Louise Brisson Fût de Chêne 2002, exhibiting a brilliant use of oak for under €50 and Drappier's Grande Sendrée 2002, one of the best prestige cuvées for less than €60. Charming service.
