The Aube’s super-cooperative (because it includes 12 other local cooperatives) is also one of the most innovative and forward thinking in Champagne. Most of its fruit comes from the Côte des Bar, with some Chardonnay from the Côtes des Blancs to the north. Its two main ranges are the classic and the 'D' range in a special-shaped bottle. In the latter, the Vintage can be excellent value, and the Ultra D Brut Nature is particularly good with a low 'dosage' and works particularly well with a meal. An interesting Rosé de Riceys is also made.

Useful information: Visits: Mon-Fri (Sat mid-April to Sept) 10.00-18.00. Tours including a glass of Champagne €5 refunded on purchase of €100 or more. Groups of four people or more can arrange special tours and tastings of three or more Champagnes. Reserve in advance, price on request.
