South of Ajaccio, along the N196 between the famous Filitosa archeological site (see 'Other Attractions') and the beaches of Propriano, is the typical Corsican village of Olmeto. Antoine, of the eponymous restaurant, is a hulking, shaven-headed, true Corsican who has been in the restaurant trade since he was 12 years old. He cooks wonderful seafood and meat dishes over an open, wood-fired grill that sits on what used to be the front entrance of one of the traditional granite homes that line the village’s main thoroughfare. The dozen or so tables are in a courtyard in front of the house. It’s now been enclosed, but the front and sides are open, making the area into an open-air terrace. The charcuterie is the real thing, made by Antoine himself from pigs that he raises in the mountains. And if he takes a liking to you, which is likely given that his smile matches his physique, he may offer you a glass of the myrtle liquor digestif with its scent of the maquis (scrubland), made by his mother. There’s also a good wine list, featuring many Domaine de Vaccelli wines.
