This hotel was previously named the Moulin de la Mère Michelle. Three kilometres from Arbois in the beautiful, peaceful Cuisance valley, close to the small village of Les Planches, it is rather a strange collection of buildings, including the main hotel building which was converted from an old mill, and a modern tower building with further rooms next door. The 22 rooms and suites in this Relais de Silence are extremely variable in size (prices reflect this), though 4-poster beds are a speciality. There is a small part-indoor heated swimming pool and a lovely 10-minute stroll takes you to an impressive little waterfall. The restaurant, which remains in the capable hands of the son of the previous owner, looks a little old fashioned, but both food and wine are very well selected and served. There is also a self-catering apartment available from €160 per night.

Useful information: Rooms: €105-€160; suites: €195-€325. Restaurant open by reservation only and eating there gives a discount off the room price. Meals: lunchtime on the terrace menus €22-€25; evening menus: €44-58. Half-board offered even for one-night stays – check website for details and also special offers. Hotel and restaurant closed all January.
