A beautiful town house set back from the road close to the centre of Arbois, with the garden stretching down to the Cuisance river, Les Caudalies was opened as a hotel-restaurant by the Troussard family back in 2009 - previously they had owned a restaurant near Salins-les-Bains. The hotel has nine practically-furnished rooms of different sizes, four in the annexe adjoining the main house; all have excellent bathrooms. Philippe is a dedicated prize-winning sommelier, his mother is in the kitchen, and his father runs the hotel. The restaurant is highly recommended and offers the right sort of mix of well-prepared food to show off the spectacular wine list of both wines from the Jura and the rest of France. Incidentally, the name Les Caudalies, refers to an obscure French measure for the number of seconds you can taste a wine after you have swallowed or spat the wine out. No spitting in the restaurant here, though. This is an excellent addition to the choice in Arbois.
