Jean Macle is known by many as the true master of Château-Chalon and his son, Laurent is trying hard to live up to his reputation. The rather daunting Madame Macle (Jean’s wife) makes it difficult to secure an appointment with either father or son, but if you can manage it, it is well worthwhile. Jean Macle’s knowledge of the chemistry of Vin Jaune production is second-to-none and his Château-Chalon is amazing, year in, year out. He produces an oxidative white and a little Crémant as well as Macvin, but these pale into insignificance beside the Château-Chalon. It is usually possible to visit specifically with a purchase in mind and then you will be given the current Château-Chalon vintage and possibly the other wines to taste. Madame Macle is in charge of sales – some older vintages may be available to purchase.
