In a glorious traditional 13th century vaulted cellar in a village just above the town of Lons-le-Saunier, the Pignier family have very quietly adapted and improved their very traditional range to appeal to a wider market. The determined Antoine Pignier managed to win around his brother Jean-Etienne and sister Florence to convert to biodynamic methods, and since 2006 their entire 15ha domaine has been certified by Demeter. Methods in the cellar are traditional with very low levels of SO2 used, and none for certain cuvées. Notable amongst their range is Chardonnay à La Percenette, the first of their whites to be made in a non-oxidative method and each vintage this delicious, steely Chardonnay seems to reach greater heights. There is also an occasional non-oxidative Savagnin named Sauvageon. Until recently light reds typical of the region were made, but in the last few vintages a deeper, brighter fruit has been evident. There is excellent Vin Jaune and Vin de Paille and this is truly an estate on the rise.
