Certified organic and farmed along biodynamic lines by Cathy Planès and Jean François Izarn, this charming property is lost in the countryside beyond the village cooperative (although well-signposted). Their sublime Saint-Chinian wines are labelled by terroir e.g. the excellent Les Schistes (Grenache, Syrah, Carignan), Les Crès (Syrah, Mourvèdre) or Terres Blanches (mostly Grenache and Syrah), reflecting the varying proportion of varieties planted across their different sites. They also make a surprisingly accomplished Vin de Pays from majority Cabernet Sauvignon plus Syrah, called La Combe.
Useful information: Meals in their ferme-auberge (farmhouse) for a minimum of ten people can be arranged in advance (organic produce). Costs €30 per person including a cartagène (traditional Languedoc aperitif), four courses with a different wine matched with each one, and a shot of home-made plum eau de vie to finish!
