Another cutting-edge organic estate (right from the beginning: they set themselves up in the region in 2001), cordial couple Sylvie and Franck Siméoni’s Saint-Chinian La Toure (mostly 100 year-old Carignan) and L'Ame des Schistes (Syrah and Mourvèdre) stand out in particular. They also make super Vin de Pays varietal wines, imaginatively packaged and with a sense of humour: stripy Mourvèdre red and rosé, a Syrah called La Tête à l'Envers ('head inside out or wrong way round') and a Carignan Vin de Crise ('crisis wine')! Commendably, they no longer use any wood for ageing their reds (rich fruit is their by-word); and have launched a punchy Syrah rosé. The purchase of a further 5ha of vineyard marks a gentle expansion, which is being converted to organics.
Useful information: You must make an appointment here as their time is divided between Prades (home/office), the cellar in Cazouls-lès-Béziers and vineyard plots spread here and there!
