This 40-ha domaine, in the Robert family for many generations, is tucked away in the hills on the east side of the Aude near the village of Pieusse (well signposted). Their whole range is good, especially their Crémants and an attractive Blanquette Méthode Ancestrale, probably one of the best in this style. A good place to learn about the two ways of making sparkling Limoux, particularly as the Roberts still use mostly traditional rémuage to shake down the settlement. A loud-mouthed donkey might warn of your approach, but it is better to phone ahead.
