Jérôme and Sabine Bertrand revived this old family property in 1993 and started making real wine again. They prefer the personal touch by doing everything themselves, including doing a laid-back tasting for you at the entrance to their cellar on the main road through Paziols (it’s clearly marked); the wines are arguably among the best in the area. All their Fitou cuvées are worth trying, such as Ancestrale, and they make a delicious Rivesaltes Tuilé (fortified sweet aged red) from pure Grenache.
