Jacques and son Mickaël Sire’s Domaine des Schistes is made up of assorted parcels lying along the Corbières foothills between Estagel, where the main cellar is found, Maury and Tautavel. Nestling behind the latter two villages is Mas de las Fredas (marked off the D117), where Mickaël lives and where they have two holiday gîtes in a 14th-century farmhouse (next door to Domaine des Soulanes – see above). There’s also a small cellar underneath containing some of their Vins Doux Naturels, such as an intricate Rivesaltes Solera and an off-the-wall Rancio Sec. Dom Schistes’ Côtes du Roussillon Villages reds are highly recommended too, from their spicy non-oaked ‘Tradition’( Carignan,Grenache and Syrah) to the chocolate-tinged yet meaty ‘La Coumeille’ (mostly Syrah).
