Pascal Rossignol (which means nightingale) and his bubbly wife Fabienne have 20ha of vineyards divided between the slopes around Passa, mostly within the Aspres sub-appellation, and the higher ground near Oms (400m altitude). Previously cooperative growers, they've built a small winery with shop/tasting room and underground barrel cellar; and have been farming organically since 2006 (2009 is their first vintage with certification). Pascal makes attractive reds – from a spicy fruity, good value Côtes du Roussillon blend called Schistes (Syrah-Grenache-Carignan) to the more concentrated, oak-aged Le Graal based on Mourvèdre. You should also try their elegant dry rosé and delicious dry Muscat d’Alexandrie, as well as very nice examples of most Vin Doux Naturel styles.
