Jean-Michel Parcé crafts a range of traditional, fine and age-worthy red wines (he doesn’t release them until he thinks there are approachable) in his compact cellar in the heart of the town centre, sourced from different parcels in prime sites around the area. Jean-Michel has been at the helm for over 30 years, continuing the good work done by the pioneering Doctors Gaston (grandfather) and André (father) Parcé. On the Banyuls side, he makes just about every conceivable style (and a couple more besides!), which makes this a great place to learn a bit about these unique VDNs. His ‘Rimage’ La Coume from old Grenache is intensely ‘sweet ’n sour’, and Colheita-styled Excellence very impressive, quirky and complex. As for Collioure reds, the Clos du Moulin label made from 80% Mourvèdre plus Counoise is a meaty, structured speciality; and his  half-Syrah Cosprons rich, smoky and savoury. The domaine is also making more white called 'Signature', and rosé wines, as well as a range of Banyuls vinegars.
