Christine and Yves Herin keep the flag flying for poires tapées in a series of troglodyte caves in Rivarennes, its old centre of production. As well as dried poires tapées you can also buy them in Vouvray, Touraine Gamay and eau de vie as well as marmelade poires tapées and an aperitif made out of them.
