With the reputation for Cassis resting on its white wine production, it is this that dictates which vineyards are noticed. The north facing slopes of this vineyard contribute to the acidity, so that while most Provençal white wines are made and consumed within the year, here they are appreciated after five years when the wines’ roundness and honeyed flavours come to the fore. The wine makes an ideal accompaniment to the richness of shellfish, as well as plain grilled fish. The third generation of the Santini family is now involved, bringing to the winemaking technical skills learned at wine college and an enthusiasm to be shared with visitors. The red wines from this estate are also particularly good, made with a high percentage of Grenache, the balance being Mourvèdre.
