Dario Cecchini is a sixth-generation butcher, known for reciting Dante and singing opera arias while serving his clients, mostly aficionados and tourists who are completely captivated by his charismatic personality. His meat and ready-prepared dishes are excellent, as well as the mostarde (mustards) he makes to accompany local pecorino cheeses. He also has an excellent restaurant where he serves traditional medieval dishes made from the lesser cuts of meat – a great fun experience that is well worth trying! A great plus is that you can bring your own wine with no corkage fee.
