Tuscany is a very ‘meaty’ region and as a result there are a number of historic butchers, such as Falorni which was established in 1729, selling Tuscan salame Finocchiona, a type of salami with fennel seeds and other herbs. Falorni also sells the excellent Chianina breed of beef as well as pork and a selection of cheeses from the artisan Busti family dairy.
